Fried Pizza Salad

The dish is a playful take on deconstructed pizza/caprese salad. My thoughts are that home ovens can't get hot enough for GREAT pizza, but it is simple enough to fry some store-bought pizza dough at home and get great results. Store-bought dough is also more appealing to a home cook, who may be intimidated by bread either in theory or the amount of time required. This recipe can be done in a flash!
Store-bought pizza dough
Olive oil or grapeseed oil
2 tablespoons juice from a tomato
2 tablespoons olive oil
1 tablespoons sherry vin
1/2 teaspoon dijon
Pinch of oregano
Salt and pepper to taste
1 heirloom tomato
10 cherry tomatoes
1 burrata ball
8 - 12 leaves of basil
5 - 7 anchovies (optional)
Fry store-bought pizza dough in olive or grapeseed oil at 375 degrees until golden brown. Dough can be fried as a whole dough ball and ripped apart post frying, or cut into "croutons" and then fried. Place onto serving plate first.
Mix the tomato juice, olive oil, sherry vinegar, dijon, and oregano. Add salt and pepper to taste.
Rough chop heirloom tomato and halve cherry tomatoes. Toss the tomatoes in dressing and place atop fried pizza dough. Top with any excess dressing and finishing salt.
Add 1 ball burrata to plate, splitting top open. Add black pepper, finishing salt & olive oil to taste.
Top with Basil leaves and anchovies, if desired
